how the hell did i GAIN 3 pounds in 3 days, or 2 practically overnight!? i'm so very confused.

Why are you confused? you are not eating enough, and this kind of dieting is just ridiculous.

It could be from the food you ate last night -- perhaps it had a lot of sodium, and you're retaining water? Or you're about to start your period -- that can also account for weight gain. Weight yourself just once a week so you don't drive yourself crazy.
